As with canning and freezing most produce, it's not difficult it just takes a little time. Although freezing sweet corn goes pretty quickly the batch size will determine how long it takes. <br /> <br /> <br /> <br /> Here is a list of items you will need to make and freeze sweet corn:<br /> <br /> <br /> <br /> Corn:)SugarSaltButterWaterTwo bowls or one bowl and a cake panKnife of choiceGarbage can or animals who like scrapsQuart Freezer bagsLadleFunnel (optional)PotLarge Spoon<br /> <br /> <br /> <br /> Now that you have what you need the first step is to shuck the corn.<br /> <br /> <br /> <br /> <br /> <br /> <br /> <br /> After you have shucked all of the corn and have taken the silks off, put the ears of corn in your sink and wash them off.<br /> <br /> <br /> <br /> Once they are washed and all remaining silks removed, bring them to your work area to begin cutting the corn off the cob.  Use your large bowl or cake pan for this and your knife of choice.  Start cutting from the top and work your way down.<br /> <br /> <br /> <br /> <br /> <br /> <br /> <br /> While cutting, place the empty cobs in another bowl to take out to the animals or throw them away in the garbage can.<br /> <br /> <br /> <br /> <br /> <br /> <br /> <br /> Once all of the corn is off the cob, it is now time to start measuring the loose corn then dump it into your large pot on the stove.<br /> <br /> <br /> <br /> <br /> <br /> <br /> <br /> Recipe for a single batch of sweet corn:<br /> <br /> <br /> <br /> <br /> <br /> <br /> <br /> 8 cups of corn2 cups water2 Tbls sugar1 tsp salt1/4 pound or 1 stick of butter<br /> <br /> <br /> <br /> Measure your corn first to determine if you will have a single, double or triple batch.  Once that is determined you can now measure the other ingredients accordingly.<br /> <br /> <br /> <br /> After all of the items are measured and in your large pot, stir often with your large spoon. With no surprise, this beautiful flower is related to the daisy family (Asteraceae or Compositae), and from what we know, there are two different types.<br /> <br /> <br /> <br /> German chamomile (Matricaria chamomilla) is one type “and is a sweet-scented, smooth plant and self-seeding annual herb. It is native to Europe and Western Asia and has become widely distributed over Europe, North Africa, and the temperate region of Asia.” <br /> <br /> <br /> <br /> The other type is Roman chamomile (Chamaemelum nobile). “Roman chamomile is an aromatic, creeping perennial, found in dry fields and around gardens and cultivated grounds. It weighed over 156 pounds.Studies have shown that the high levels of unique antioxidants and anti-inflammatory agents found in beets contribute to a reduction in the risk of many types of cancers.Beets have also been shown to support the detoxification process in the body. Don't you love beets even more? I certainly do. We grow a lot of these gems every year and enjoy them fresh in the Fall or throughout the Winter and Summer months before the next harvest comes in.<br /> <br /> <br /> <br /> As stated you can juice them, heat them on the stovetop, use the leaves to make beet leaf soup, or freeze them which I'm going to show you how to do right now.<br /> <br /> <br /> <br /> How to Freeze Beets<br /> <br /> <br /> <br /> To begin, fill a pot with water and then place your whole beets, minus the leaves into the pot.<br /> <br /> <br /> <br /> <br /> <br /> <br /> <br /> 2. Next, turn your stovetop to medium and cook your beets until you can peel the outer layer of skin back with a knife. Remember, you're checking one, not peeling or skinning the entire one at this time.<br /> <br /> <br /> <br /> <br /> <br /> <br /> <br /> 3. If the skin peels back nice and smooth, your beets are ready. At this point, remove them and place them in a different container or drain the water and keep them in the pot but on a separate burner to cool.<br /> <br /> <br /> <br /> <br /> <br /> <br /> <br /> 4. Once cooled, cut the ends off and peel each beet. You can discard your ends and skins in a separate container and feed them to your chicken, other animals, compost them, or throw them in the garbage.<br /> <br /> <br /> <br /> <br /> <br /> <br /> <br /> 5. Now, cube your beets or cut them into the desired size and place them in a large bowl.<br /> <br /> <br /> <br /> <br /> <br /> <br /> <br /> 6. To finish, place a funnel through the top of a quart zip lock bag and scoop the prepared beets into the bag until filled.<br /> <br /> <br /> <br /> <br /> <br /> <br /> <br /> Be sure the seal is clean and then close the bag making sure to get out as much air as possible. Smooth, label, and stack the bags, then freeze. <br /> <br /> <br /> <br /> <br /> <br /> <br /> <br /> That's it. You are now a pro at cooking off and freezing beets. We use it on popcorn, our fresh beets, different potatoes, when we sauté fresh veggies, and on top of fresh biscuits. Let's get started... <br /> <br /> <br /> <br /> How To Make Your Own Butter<br /> <br /> <br /> <br /> <br /> <br /> Items and Ingredients you will need:<br /> <br /> Your choice of machine.  Kitchen Aid, old fashion hand turner, or a jar with the motor on top.<br /> Fresh farm cream or heavy whipping cream from the store.<br /> Large spoon.<br /> Dishcloth to cover a kitchen aid if that is your choice machine.<br /> Salt<br /> Saran wrap.<br /> Butter mold (optional)<br /> Brown sugar (optional)<br /> Glass jar to save the buttermilk.<br /> Medium-sized bowl.<br /> <br /> First Step: Pick your machine and fill it only half full of cream!<br /> Second Step: Turn your machine on or hand turn it until the cream comes clear to the top, breaks back down and you see yellow clumps of butter.  The buttermilk will be splashing all sides of the jar.  If you are using the kitchen aid, cover it with the dishtowel, so the buttermilk does not splash all over.<br /> Third Step: Take your spoon and try to clump or ball the butter up in machine you are using and then scoop it into your bowl.<br /> Fourth Step: Dump buttermilk into your jar a place in the fridge, saving it for another time.<br /> Fifth Step: Wash out the butter in your bowl by running cold water over it and mixing with your hands.  Repeat this method until the water in the bowl runs clear then drain water out of the bowl and bring to your counter.<br /> Sixth Step: Salt using 1tsp to 1Tbls and or use brown sugar for special occasions.  Work the salt or sugar you have put on your butter in with your hands. If you want unsalted, you will skip this step.<br /> Seventh Step: Next, place butter in a mold you have purchased or mold it by using your hands.  You are now ready to use it.  Put in a dish, fridge or wrap it in Saran Wrap and freeze it for another day.<br /> There you have it; how to make butter.  If you have any questions feel free to ask in the comments section and or you can watch my video at the top.<br /> <br /> If you want to make whip cream, you will stop the machine when the cream has gone all the way to the top, broken down about halfway and has a thick consistency.
